• Salt & Straw, an ice cream shop, opened in northwest Portland. The Oregonian, 4/25/2012

• Waffle Window will open in southeast Portland. In addition to waffles, it will offer ice cream. The Oregonian, 4/23/2012

• Brown Butter Bakery opened a pop-up store inside The Cottage artists' cooperative in Scappoose and plans to open a second pop-up store in a couple months. The Chronicle, 4/4/2012
